This weekend could not have been better! I was lucky enough to have both Friday and Saturday off – giving me some time to enjoy this crazy beautiful holiday weekend!
Saturday morning I got up bright and early and went into Chicago to run the Soldier Field 10 Mile with some friends. Dark storm clouds and heavy winds plagued the city. At one point, tents were blowing over… Luckily the storm held off and we ran the race! I am not quite sure how it happened, but I have learned to love running! The most important thing that I have learned is to run with someone. Running can be just as tough mentally as it can be physically, especially long-distance running. So having a running buddy is definitely something to keep in mind!
When I got home I found out that my mom (yes, I still live with my parents…that’s what happens when you live in New York for a year and the cost of living takes all of your money!) had ordered fresh king salmon from Copper River that was being flown in from Alaska that day. My mouth is watering right now just thinking about it… I have to say, I am the ideal child when it comes to food – my parents are pretty lucky to have me! I have never been picky about what I eat. If it is put in front of me, I will eat it…unlike my younger brother who will pull out the box of cereal when he doesn’t like a dinner that has been made.
Even if I am uncertain about a food, I am always willing to try it at least once. Fish was like that for me. The fishy taste, the slimy texture. These were all things that I had stuck in my mind. While they can be true, there is nothing better than an amazing, fresh filet of fish. So when I heard that 4.5 pounds of salmon were being flown into O’Hare International Airport specifically for the Engstrom household…I was ecstatic!
I knew immediately what recipe I wanted to use! We have an amazing recipe for grilled salmon with a glaze/sauce made with Jack Daniel’s whiskey. Once you try this, I am sure that it will become one of your go-to recipes for salmon!
The only real prep work for this is making the sauce…beyond that, throw it on the grill and you’ve got yourself an outstanding meal! Pair it with some boiled potatoes and a fresh green salad for a sure-fire way to impress that special someone.
Try pairing a great white wine with this meal as well!
- A riesling will have a nice balance of acidity and fruit that will go well with a smoked fish or spicy sauces.
- A chardonnay is a great wine that will be great with any roasted or grilled salmon.
Salmon with Jack Daniel’s Sauce
4 salmon filets
1 teaspoon onion powder
1 tablespoon tabasco sauce
2 tablespoons red wine vinegar
1/4 cup Jack Daniel’s whiskey
2 cups brown sugar
1/4 cup water
2 beef bouillon cubes
2 tablespoons Worcestershire sauce
Combine all ingredients and bring to a boil (over medium to high heat). Reduce to a simmer for 15 minutes. Cool to room temperature and place in a glass jar.
Sprinkle garlic salt and pepper on both sides of the salmon filets. Place in a plastic bag and pour enough Italian dressing to coat filets. Marinate for 15 minutes and NO MORE!
Rub grill with oil and grill the filets.
You use the sauce as a glaze or pour over filet at the table.
